Mixed Vegetables Salad
Vegetables provide you with the greatest variety of vitamins, minerals,
fiber and complex carbohydrates, and can help you to lower cholesterol and
control your blood glucose levels. Try to eat at least 5 servings of fruit
and vegetables a day for better health.
INGREDIENTS:
1 cup cherry tomatoes
4 cups fresh spinach
1 cup cauliflower
1 cup fresh mushrooms
1 cucumber sliced into circles
1/2 red onion, cut into rings
2 cups cooked chick peas
1 small avocado
1 cup plain fat-free yogurt
4 tablespoons skim milk
1 teaspoon garlic salt
Artificial sweetener
PREPARATION:
Wash and disinfect the tomatoes, spinach, cauliflower, mushrooms,
cucumber and onion.
Mix together in a salad bowl with the chick peas.
In a blender mix avocado, yogurt, milk, garlic salt, and sweetener.
Pour the dressing over the salad and mix.
Makes 6 servings.
